Broccoli Fritters

I have never EVER been a broccoli fan.

Ever. Ever. Ever.

I feel like my taste buds changed though when I had my second baby. I traded in sour candy for broccoli and cauliflower.

Which is probably a good thing because my metabolism is only getting slower and I'm pretty sure my ass will be much happier with broccoli.

....... Which reminds me, I seriously need to go to the gym this week. Anddddd you should all try these broccoli fritters because not only are they good for you, but they have parmesan cheese in them so they are FREAKING delicious.

Broccoli Fritters

Ingredients
3 1/2 cups chopped raw broccoli
3/4 cups all-purpose flour
2 large eggs
1/3 cup grated parmesan cheese
1 small clove garlic (minced)
1/2 teaspoon Kosher salt
1/4 tsp black pepper
1/8 tsp red pepper flakes or cayenne pepper
Olive oil or vegetable oil

Directions
1. Finely chop the broccoli. 

2. In a medium bowl, combine chopped broccoli, eggs, flour, parmesan cheese, minced garlic, black pepper, Kosher salt, and red pepper flakes. Mix until everything is well combined.

3.  Heat 1 tbs oil over medium-high heat. Once your pan is hot drop in a large spoonful of broccoli batter and use the back of your spoon to flatten it out so it looks like a round patty. Cook until brown, about 2 minutes, then flip over and cook the other side for about 2 mintues more or until golden brown.

4. Serve warm with sour cream.
