Conversation Cheesecake Hearts

How cute are these? These creamy little cheesecakes are absolutely delicious and perfect for your valentine. I originally saw these beautiful little cheesecakes on Hungry Happenings and then tweaked the recipe a bit. I made these on an episode of Home and Family on the Hallmark Channel back in 2014, and I’m remaking them today for Instagram! These are my OG cheesecakes from when I originally made them in 2014. I used a simple icing on these.

Valentine Conversation Heart Cheesecakes

Yields: 12 Mini Cheesecake Hearts
Recipe adapted from Hungry Happenings

Ingredients (Crust)
1 1/2 cups graham cracker crumbs
1/4 cup + 1 Tbsp white granulated sugar
9 tablespoons (1 1/8 stick) butter, melted

Ingredients (Cheesecake)
16 ounces (2 blocks) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
Food coloring

Directions
1. Preheat oven to 325 degrees.

2. Prepare a water bath for your cheesecakes. Use either a roasting pan or a shallow baking dish that's large enough to fit the cheesecake mold. Fill it with enough water to go half way up your heart molds. Make sure you don't add too much water. You don't want the water going into the cheesecake mold. Place this roasting pan with water only in the preheated oven so it comes up to temperature by the time you need to cook the cheesecakes.

3. In a medium bowl, combine graham cracker crumbs, white sugar, and butter for the crust. Mix with spoon until well combined.

4. Spoon graham cracker mixture evenly among 2 silicone heart molds (12 hearts) and pack down with the back of a spoon. Store in refrigerator until cheesecake mixture is ready to pour.

5. Using a hand mixer or in a stand mixer, add softened cream cheese, sugar, eggs, and vanilla extract and mix for another 2 minutes on med-high speed until everything is well combined and your mixture is smooth with no lumps.

7. Stir in the sour cream and pour cheesecake batter into 6 small bowls. Add 1-2 drops of each food coloring until you achieve your desired color.

8. Pour colored batter into prepared graham cracker hearts almost to the top.

9. Carefully place heart molds into your water bath and cook for 25-30 minutes.

10. Remove from oven and remove from water bath. Let sit at room temperature for one hour and then place in freezer for two hours.

11. Remove from freezer and pop them out of the silicone mold. Pipe whatever text onto the top of the conversation cheesecake heart.
