St. Patty's Day Cheesecake Bars

Did you know that originally, the color associated with Saint Patrick's Day was blue!? Yes sir ri. Over the years the color has actually changed over to green and its association with Saint Patrick's Day has grown.
I'm Irish so I'm super smart : ) 
Actually I'm just Irish.
I totally just Googled the history of St. Patrick's Day.
What would we do without Google?
I'd probably be outside more.
Have better eye sight.
Less headaches. 
I wouldn't be able to stalk people.
Or spell for that matter.
Or look up bad words in different languages and have that funny lady say them out loud.
But I would probably have more meaningful conversations with actual human beings.
Whatever.
I love Google.

St. Patty's Day Cheesecake Bars

Recipe adapted from Roxana's Home Baking

Ingredients
1 package refrigerated Pillsbury Ready To Bake!® Big Deluxe Chocolate Chip Cookies with Hershey's® mini Kisses®
2 packages (8 oz each) Philadelphia cream cheese, softened
1/2 cup sugar
3 eggs
1/2 tsp vanilla
Green food coloring

Instructions
1. Preheat your oven to 350 F and line a 9" x 9" baking pan with parchment paper.

2. Remove the refrigerated cookie dough from the package and with your fingers press it evenly on the bottom of the prepared pan.

3. Bake in preheated oven for 18 minutes. The dough will be slightly puffed up but not fully cooked. Remove from the oven and lset aside to cool.

4. In a large bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth and creamy.

5. Add eggs, one at a time, beating until smooth. Stir in the vanilla and add the green food color until well combined.

6. Pour the cheesecake filling over the cookie dough and bake in preheated oven for 30 minutes or until the center is just set.

7. Let the cheesecake cool at room temperature for at least 1 hour and refrigerate for 4 hours before cutting into bars.
