White Chocolate Rolo Fudge

I don't know what it is with fudge, but I am obsessed with it. It's very addicting. I usually can't stop eating it until I realize I have had too much and I start feeling sick. It's so sweet, but I absolutely love it. This fudge is super simple to make and you can top it with whatever candy you want. I chose Rolos because I happen to love them and visually I thought it looked pretty with the contrasting white fudge, but feel free to use whatever you want. Enjoy! 

White Chocolate Rolo Fudge

Ingredients
1 (8 ounce) package cream cheese
4 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
12 ounces chopped premium white chocolate (Use the good stuff)
1 bag Rolos

Directions
1. Grease an 8x8 inch baking dish and set aside.

2. In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.

3. In the top of a double boiler over simmering water, heat your white chocolate and stir constantly until the chocolate is completely melted and smooth. If you are using white chocolate chips you can heat them in the microwave at 30 second intervals, stirring in between until melted.

4. Fold melted white chocolate into the cream cheese mixture and spread into your prepared baking dish.

5. Cut Rolos in half and press into fudge. Chill for 1 hour, then cut into 1 inch squares.
