Homemade Peanut Brittle

Today is Valentine's Day. Today is also my Dad's birthday. And my Dad loved peanut brittle. It was his favorite candy. Every time my mom and I went to Disneyland we would bring him back some peanut brittle. I always got sour candy. Charlie always got ice cream. My mom got a caramel turtle. And my Dad got peanut brittle. Frank ... I have no idea what you got. I don't think you were born yet : ) (He hates when I say that)

Today I made some of this crunchy goodness for the first time. It actually wasn't too difficult. Time consuming, but worth it. I do wish my Dad was here so I could give him some of this homemade peanut brittle. I think he would be pretty impressed that I made it from scratch.

Dad's Peanut Brittle


Ingredients
1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

Directions

1. Grease a cookie sheet and set aside.

2. In a large saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads. (I did this second method)

3. Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet and smooth out quickly. Let cool. Break candy into pieces.
