Homemade Avalanche Bars

Have you ever been to the Rocky Mountain Chocolate Factory? I believe they have locations in almost every state. Although I could be wrong. I have only had 3 hours of sleep (darn site optimization). So, I experienced my first Rocky Mountain Chocolate Factory years ago when my parents took us to Aspen, Colorado on a ski trip. Oh holy moly goodness. They make the fudge right in front of you. You walk in and you just smell butter and chocolate and warm melted caramel. Mickey Mouse may as well be sitting there dipping the apples because it's the happiest place on earth as far as I'm concerned. Especially awesome on a cold snowy night in Aspen, Colorado. Just saying. 

So after multiple times of visiting this factory of awesomeness, I tried their avalanche bar. What! Where have you been all my life!? Delicious white chocolate with crunchy rice Krispies, soft marshmallows and a hint of peanut butter - oh bring it on. 

Well last week I decided to make these avalanche bars. And I did. I made an entire batch. And then I ate it. I took two pictures and ate every single piece. My mom actually came over the night I made them and I had only one square left. I can't believe I even let her try it. I was like a crazy hoarder. I sat over the dish and ate every crumb like a freak. Yes, it's that good. My mom got two bites. She will agree. Ok, enough talking. Just make 'em.

Homemade Avalanche Bars

Ingredients
12 oz (3 - 4 oz bars) of high quality white chocolate ( I get the Ghirardelli bars)
1/4 cup creamy peanut butter
3 cups rice Krispies
1 1/2 cups marshmallows
1/4 cup mini semi-sweet chocolate chips

Directions
1. In a medium bowl break up your white chocolate bars and heat at 30 second intervals (stirring in between) until everything all chocolate melted. 

2. Add in the creamy peanut butter and combine well. 

3. Add in rice Krispies and set aside for about 10 min. You want the temperature to come down a little before you add in your marshmallows and regular chocolate chips (we don't want these to melt).

4. Now add the marshmallows and the mini chocolate chips. Combine.

5. Pour mixture into a buttered or sprayed 8x8 square dish. Spread everything down evenly. Refrigerate for 20 minutes. Serve!
