Broccamole

We eat guacamole 3-4 times a week in our household. We are pretty much obsessed.

Lily makes the guacamole every time. It's her favorite thing to make. She has all her secret ingredients and special sauces and she is a pretty amazing little cook! Yesterday we whipped up something a little more healthy. This guacamole has no avocados. I know .... crazy right!? It is made entirely with broccoli! Mashed broccoli, white onion, jalapeno (for some kick), a bit of tabasco, cilantro, salt, pepper, garlic powder, and fresh lime juice. Yum freaking yum. If you are looking for a healthier alternative to guac and chips this is pretty darn good. Scroll down for the recipe!

Ingredients
1 cup broccoli florets
1/2 small white onion (finely chopped)
1 small jalapeno (finely chopped and 3/4 seeds removed)
1 small handful cilantro leaves
2 limes juiced
1/8 tsp garlic powder
1/4 tsp kosher salt
1/8 tsp black pepper

Directions
1. Bring a pot of water to a boil. Cook broccoli florets in salted boiling water for 1 minute. 

2. Drain water and combine broccoli, jalapeno, cilantro, garlic powder, salt, pepper, and lime juice in a food processor. Pulse until well combined and broccamole is thick like guac. Remove from proccessor and mix in chopped white onion.

3. Taste and add more salt and lime if desired. (Just like guacamole, you have to taste and add, taste and add.)
