These are my go-to pancakes every weekend and usually one day during the week. If you don't have the Krusteaz pancake mix, it's the best. I get a huge bag at Costco and Lily and I come up with different pancake recipes using the mix as the base. These are super yummy and my kids even love them. This particular recipe has protein in it, so if you have a child that doesn't get a lot of protein during the week and you want to sneak it in make sure you get one that is safe for children or omit the protein altogether.

Side note: I made, ate, photographed, and posted these pancakes before 9 am. WHAT NOW!? Kicking ass this Saturday. Off to the gym. Happy weekending everyone. Xx

Quick 5 minute Banana Blueberry Protein Pancakes

What you need
1/2 cup Krusteaz Pancake mix
1/4 cup of 1 minute oats
1 cup water (possibly 1 tbs more if it's too thick)
1 tsp. cinnamon
1 banana (ripe)
1-2 cups blueberries
1/4 cup vanilla whey protein powder

Directions
1. Add all of your ingredients together in a large bowl and use a fork to mash the banana until there are no more chunks. A ripe, almost brown banana, works very well for this because it adds a sweetness to the pancakes and keeps them very moist. (I hate that word, but it's very descriptive)

2.  Heat a non-stick skillet over medium heat for two minutes before using a 1/4 measuring cup to scoop the batter onto the griddle. Add  4-5 dry blueberries inside each pancakes. When bubbles come to the top of the pancakes and almost all of them pop, it's time to flip the pancake. Cook for one more minute before transferring to a plate.

TIP: Never grease your pan or griddle when making pancakes. Always uses a dry non-stick pan for perfectly brown pancakes.
