Eggless Cookie Dough Ice Cream Sandwich Bites

The world just seems right when I have sugar.

Cookie dough. Check.

Vanilla ice cream. Check.

Holy moly freaking yumminess. Check. 

This is an eggless cookie dough recipe so you can cut this up and put this directly into ice cream or you can make these fabulously happy ice cream sandwiches like we did! Eggless Cookie Dough Ice Cream Sandwich Bites

Ingredients
1/2 cup all-purpose flour
2-1/2 tablespoons brown sugar
3 tablespoons white sugar
2 tablespoons butter, softened
1/8 teaspoon vanilla extract
2 tablespoons water
1/2 cup semi-sweet chocolate chips
Vanilla Ice Cream

Directions
1. In a medium bowl, mix together the brown sugar, white sugar, and butter until completely smooth.

2. Stir in vanilla and water then mix in the flour until it's all well combined. Add chocolate chips and squeeze with your hands if it's too hard to mix with a spoon. Shape into a loaf and wrap in plastic wrap and freeze for 1 to 2 hours.

3. Cut the loaf of cookie dough in half and spread half the dough in the bottom half of a small square tin (I doubled the recipe and used a rectangle tin that I had on hand in above pic). 

4. Spread vanilla ice cream over the first layer of cookie dough and freeze again for 10 minutes or until ice cream is frozen again and not melted. 

5. Remove from the freezer and gently flatten the second half of the dough out with your hands and place it on top of the ice cream and squeeze it down so it makes a sandwich then freeze again for 15 minutes before cutting into squares and serving.
