It's Day 2 of Waffle week and we made an omelette with a waffle iron! Mmmmmmm.

It's fast, delicious, and it only takes 2 minute to cook! Annnnnnnnd you don't have to worry about flipping it because it cooks on both sides. Pretty snazzy huh?

Omelette Waffle

Ingredients
3 Eggs
1/2 Bell Pepper
1/4 cup Mozzerella
1/2 green onion
Salt and Pepper to taste

Directions
1. Beat your eggs in a bowl and add salt and pepper. If desired add a splash of milk to make the eggs a little more fluffy. Also add in cheese. Set aside.

2. Spray your nonstick waffle iron with cooking spray and place your chopped peppers and onions directly on one side of the grill. Cook for 20 seconds.

3. Cover veggies with your egg and cheese mixture and close the waffle iron. 

4. Cook for 2-3 minutes until completely done. If you have the Waffle Flip Iron, flip it half way through. Garnish with sour cream and sliced tomatoes.
