How to Make Homemade Granola

Sometimes I find myself wishing for something to happen. I think we all do this. Whether it be a job or a relationship or anything in life, we want it to happen when we want it to happen. Unfortunately, this isn't how life works. Life is all about timing. Like I tell my kids, 'you get what you get and you don't get upset.' I should really listen to my own advice. There is no need to rush through life. I need to enjoy the moment and trust the timing of my life. And I need to remember, just because the past didn't work out how I wanted it to, doesn't mean the future can't be better than I ever imagined.

I woke up super early this past Monday and went down to the kitchen and just listened to my music and made homemade granola. The kitchen smelled like brown sugar and coffee and I loved every minute of it. I wasn't wishing for anything. I was simply just enjoying the moment and that's pretty rare for me. 

But I'm totally going to be doing more of it ~ Homemade granola recipe below. Xx

Homemade Granola

Ingredients
3 cups rolled oats (not instant)
3 tablespoons packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/3 cup honey
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup sliced apricots (or other small-dice dried fruit)
1/2 cup almond slices

Directions
1. Heat your oven to 300 degrees.

2. Place oats, brown sugar, cinnamon, and salt in a bowl and mix together.

3. In a separate bowl combine honey, vegetable oil, and vanilla. Stir to combine and pour over dry mixture until completely coated.

4. Spread the mixture in a thin, even layer on a rimmed baking sheet. Bake for 15 minutes, then stir and continue baking until the granola is very light golden brown, about 10 to 15 minutes more.

5. Let cool for 25 minutes. The granola will harden as it cools. Store in an airtight container.
