Molten Lava Cookies

Ingredients

6 tablespoons salted butter, melted

1 1/2 cups Lily’s semi-sweet chocolate style chips

3 large eggs, room temp.

1/2 cup granulated white sugar or sweetener of choice (1/4 cup if using stevia granulated sugar. Do not use powdered stevia or liquid stevia.)

2 tablespoons vanilla extract

3/4 cup All Purpose flour

2 tablespoons unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon Kosher salt

6 ounces Lily’s Dark style baking chips (for “lava”)

Flake salt

Directions

  1. Line 2 baking sheets with parchment paper. 

  2. In the microwave, melt butter and semi chocolate chips together. Mix and set aside.

  3. In a separate mixing bowl, whisk together the eggs and sugar until creamy. Add in vanilla and melted chocolate butter mixture, whisking until the mix looks glossy.

  4. Add flour, cocoa powder, baking soda, and salt and mix until just combined. Refrigerate the dough for 45 minutes, until the batter is like a thickened fudge. Do not skip this!

  5. Remove from fridge and using a cookie scoop, scoop the dough into balls and place on the prepared baking sheet. Stuff each ball with dark chocolate chips and roll into a ball. Freeze for 20 minutes on the baking sheet until firm. DO NOT skip this step. It's essential to the recipe. Preheat oven to 350° F.

  6. Pull the dough balls out of the freezer. and bake for 10-12 minutes or until the cookies start to set around the edges, the centers should be a little doughy. Let cool on the pan.

  7. Sprinkle with flake salt. Eat warm!
