Aebleskiver Danish Pancakes

Ingredients

2 large egg whites

2 cups buttermilk

2 cups all-purpose flour

2 large egg yolks

4 tablespoons butter, melted

1 tablespoon white sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

Directions

  1. In a large bowl, combine flour, baking powder, baking soda, salt, and sugar.  Stir well, then add the egg yolks, melted butter and buttermilk. Mix just until combined. Set aside.

  2. In a medium bowl, beat the egg whites with an electric mixer until stiff peaks form.

  3. Gently fold the beaten egg whites into the batter.  Do not over mix. Batter will be thick.   

  4. Heat your aebleskiver pan over medium heat until hot.  Brush each cavity with a little melted butter and fill each cavity with 2 tablespoons of batter, about 3/4 full.

  5. As soon as the aebleskivers begin to bubble around the edges (like a traditional pancake), use a wooden skewer or fork to flip them over half way, letting the batter slide around to fill in the bottom of the cup. Let cook for two more minutes then remove from heat.

  6. With a piping bag, fill with jam, Nutella, or even peanut butter. Serve warm with powdered sugar.
