Strawberry Daiquiri Popsicles

Traditional strawberry daiquiris are loaded with sugar. These daiquiri popsicles contain only 55 calories and they are perfect for a hot summer day! Scroll down for the recipe 🍓

Ingredients

2 cups fresh strawberries

2 cups frozen strawberries

1 tablespoon sugar **(If you prefer a sweeter popsicle add 2 tablespoons)

Juice of 1 lime (2 tablespoons)

1/4 cup water

2-3 ounces rum (*omit for virgin daiquiris)

Directions

  1. Add fresh strawberries, sugar, and lime juice to a blender and let sit for about 20 minutes, until the strawberries release their natural juices.

  2. Add rum, water, and frozen strawberries and blend until smooth. Pour into popsicle molds and freeze for 5-6 hours or until frozen. Serve as is or dip in dark chocolate!

** Variations: Add 1/4 cup Greek Yogurt for a creamier popsicle. Add lime zest for a more tart popsicle. **
