Three Ingredient Cauliflower Fries

3-Ingredient Cauliflower Fries

Servings: 2 (16 fries total)

Ingredients

2 cups raw riced cauliflower

2 large eggs

1 cup fresh Parmesan cheese (or cheddar)

1/2 tsp kosher salt

1/4 tsp black Pepper

** Variations: Add 1/4 tsp garlic powder to mixture for garlic fries. Sprinkle with fresh thyme after baking for an elevated fry. Sub sharp cheddar cheese for parmesan. Sprinkle with Lawry’s seasoning after baking for an extra salty version. **

Directions

  1. Add all ingredients to a blender and blend until well combined (about 3 minutes). You want a paste consistency.

  2. Use a cheese cloth or strainer to remove all liquid. This is important. You need a dry mixture. Use a paper towel to pat down any excess liquid if you don’t have cheese cloth.

  3. Line a baking sheet or air fryer tray with parchment paper and use a paper towel to shape the fries. Bake in air fryer at 350 degrees F for ten minutes then turn up to 400 degrees F for the last 6-8 minutes until crispy and browned. (Check your air fryer!) If using an oven, bake at 400 degrees F for 20-25 minutes on the middle rack until browned and crispy.

  4. Sprinkle with more Kosher salt, Parmesan, and fresh thyme. Serve hot.
