Sugar Cookie Bars

These are soft, chewy and perfect for any holiday. It’s a basic vanilla dough so you can add any sprinkles you want or leave as is.

Ingredients

Cookie Dough

2 sticks (1 cup) unsalted butter, room temperature

1 1/2 cups (300g) granulated sugar

1 tsp kosher salt

1 large egg, room temperature

1 tsp vanilla bean paste (extract is fine as well)

2 1/2 cups (320g) All-purpose flour

¼ tsp baking soda

3/4 cup sprinkles, divided

Buttercream Frosting

½ cup unsalted butter, room temperature

2 cups confectioners' sugar, sifted

1 ½ teaspoons pure vanilla bean paste

2 tablespoons milk

Directions

  1. Preheat oven to 350 F and line an 9”x13” pan with parchment paper (that slightly overhangs your pan) and non-stick spray.

  2. In a large bowl, combine butter, granulated sugar, salt, and egg and mix with a handheld mixer on high speed until fluffy and well combined.

  3. Add baking soda and flour gradually. Stir to combine and fold in 1/2 cup sprinkles.

  4. Transfer the cookie dough to your prepared pan, and spread into an even layer using an offset spatula or your hands.

  5. Bake for 20-25 minutes until slightly golden and cooked in the center. Remove and let cool. While cooling, make your frosting.

  6. Cream butter in the bowl of a stand mixer fitted with the paddle attachment (or with a handheld mixer) until smooth and fluffy. And vanilla and milk and mix until smooth.

  7. Gently remove your cookie bars from your pan and place on a wire rack. Once cool frost with an offset spatula and top with more sprinkles. Enjoy!
