No-Bake Pineapple Dream Bars

No-Bake Pineapple Dream Bars

Crust Ingredients

2 cups graham crumbs 2 sleeves, crushed

1/2 cup unsalted butter, melted

Filling Ingredients

1/2 cup unsalted butter, softened

4 oz cream cheese, softened

2 cups powdered sugar, sifted

8 oz Cool Whip (Low-fat)

20 oz can crushed pineapple, drained

Directions

  1. Prepare an 8”x8” or 9”x9” pan with parchment paper that overhangs the sides a bit so you can easily lift the bars when ready. ** If making no-bake see next step! If you want a crisper crust, preheat oven to 325 F.

  2. Melt butter in the microwave and combine with graham cracker crumbs. Mix well and press 1 1/2 cups of the crumb mixture firmly into prepared pan. Now you can either freeze for 30 minutes (no-bake) or bake for 8-10 minutes for a firmer crust. Allow to cool.

  3. In a large bowl, beat cream cheese, butter, and powdered sugar on low until fully incorporated. Turn to medium-high and beat until completely smooth. Fold in 1/4 cup of drained pineapple (reserving the rest for the whipped topping layer). Spread the cream cheese and pineapple mixture over the crust.

  4. Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese layer. Sprinkle remaining graham cracker crumb mixture on top and freeze for 3 hours or refrigerate overnight. Enjoy!
