Apple Pie French Toast

I had this idea to make apple pie stuffed French toast so we woke up this weekend and made it. It was absolutelyyyyy delicious. I couldn’t help to think it would be delicious for dessert with vanilla ice cream. Scroll down for the recipe.

Apple Pie Stuffed French Toast

Ingredients (Apple Pie Mixture)

4 medium apples (I used Granny Smith), peeled

⅓ cup granulated sugar

1 1/2 teaspoons cinnamon

3 tablespoons water

2 tablespoons unsalted butter

1 tablespoon cornstarch

2 tablespoons water

Ingredients (French Toast)

Brioche Hot Dog Buns

4 large eggs

2/3 cup whole milk

1 tsp Cinnamon

1 tsp Vanilla extract

1/4 tsp salt

Directions

  1. Peel, core, and chop apples. Add to a medium bowl and sprinkle with cinnamon, sugar, and 3 tablespoons of water.

  2. Melt butter over low-medium heat and stir in apple mixture. Cover and cook, stirring occasionally for 4-6 minutes until slightly softened.

  3. In a small bowl combine cornstarch and 2 tablespoons of water. Add to the pan on medium heat while stirring. Continue to cook until apples are soft and filling is bubbling and has thickened (about two more minutes). Remove and set aside.

  4. Make French toast mixture by adding eggs, milk, cinnamon, vanilla, and salt to a large bowl and whisk until bubbly.

  5. Stuff 6 brioche buns with apple mixture (don’t overfill) and dip in French toast egg mixture until all sides are covered.

  6. Heat large pan over medium heat with one tablespoon of butter. Add stuffed French toast and cook on all sides until golden, about 4 minutes. Remove and serve with syrup or powdered sugar.

** Tips: Serve with a scoop of French vanilla ice cream for dessert.
