3 INGREDIENT Crumpets

** You can substitute chocolate chips for the blueberries and you may use Greek yogurt instead of bananas if you have allergies **

Servings: 6 (3” crumpets)

INGREDIENTS

2 cups Self-Rising Flour

4 very ripe bananas (1 1/4 cups)

3/4 cup blueberries (fresh or frozen)

** To make your own self rising flour just use this basic formula: For every 1 cup of all-purpose flour (or gluten free flour), add 1 1/2 teaspoons of baking powder and 1/4 teaspoon fine salt. Whisk the ingredients thoroughly in a large bowl and store your self-rising flour in an airtight container in the pantry.

DIRECTIONS

  1. In a large mixing bowl, combine self-rising flour and mashed bananas. Mix very well with a spatula then fold in your blueberries. You don’t want to smash your berries. The dough will be very sticky. If you have large bananas you can add another 1/4 cup of flour.

  2. Line your air fryer tray or baking sheet with parchment paper AND grease generously with nonstick spray. Preheat to 350 degrees F.

  3. Divide the dough into 6 balls using an ice cream scooper.

  4. Air fry at 350°F (180°C) for 12-15 minutes (on the middle rack if using an oven shaped air fryer) or bake in oven for 20-24 minutes or until golden brown on the tops.

  5. Remove from the air fryer and let cool. Slice and enjoy!
