Mexican Flatbread Pizza
Can you believe it's November!? I seriously have no idea where this year has gone. I feel like I have been in a whirlwind for the last several months. Ups and downs, smiling, laughing, crying, love, work, freaking LIFE! Well I got 9 hours of sleep last night so I feel like I'm reallllllly thinking clearly this morning ... you probably think I'm going to have some sentimental craft or something to follow this dramatic post, but Nooooooo .... I have Mexican Flatbread Pizza ...... hahahahhaa. Why does that make me laugh? I am so weird. I hope everyone has a seriously amazing day today and an amazing November for that matter! Smile! Life's too short. Oh, and this flatbread pizza is seriously freaking amazing!!! Xx
Mexican Flatbread Pizza
Ingredients
2 pieces Flatout Flat Bread Spicy Italian
2/3 cup shredded mozzarella cheese
1 red bell pepper, thinly sliced
2 Tbsp chopped red onion
2/3 cup roasted white corn (can be frozen or canned and pan roasted stove top until brown)
1/2 cup black beans
2/3 cup Con Queso cheese
2 Tbsp cilantro chopped
1/2 avocado (thinly sliced)
Directions
. In a small dry pan over medium heat, roast your corn until brown. About 5 minutes, set aside.
2. Preheat your oven to 425 degrees and place your flatbread on a non-stick baking sheet.
3. Layer your beans, corn, Mozzarella cheese, tomatoes, and red onion and bake at 450 degrees for 10 minutes.
4. Remove from oven and sprinkle with Con Queso cheese and cilantro (and avocado slices if desired). Eat!
