How to make a Pancake in a Mug

So last night I decided to stay in and curl up in bed and watch a movie while finishing my #girlboss book at the same time (pretty sure I have ADD). I watched  'Up Close and Personal' with Michelle Pfeiffer and Robert Redford (OMG he is sooooo handsome btw .... and she is beautiful!) The movie was great. I was eating crackers, reading my book, and Googling brass coffee tables when all of a sudden the movie got sadddddddd! Stopppppp it. Before I knew it I was freaking sobbing all over my Cheez-Its, closing down my browsers and thinking "ooooooooh who cares about these tables! Life is too short! It doesn't even matter what coffee table I getttttttt."

Seriously though, when the movie was over I turned it off and had to watch HGTV for a good 30 minutes so I could calm down and feel normal again. Please tell me someone else has watched this movie? And cried like a lunatic.

By the way, these pancakes in a mug are super fun and not depressing at all. I highly reccommend them. Especially after watching a sad movie. Xx

Individual Pancake Mugs (3 versions)

Blueberry Pancake Mug Ingredients (per mug)
1/3 cup Krusteaz Buttermilk Pancake Mix
1 tbsp butter
3 tbsp water
1/8 tsp lemon zest
1 tbsp quick 1 minute oats
1-2 tbsp fresh blueberries

Directions
1. Gently spoon pancake mix into measuring cup and level it off with the back of a knife.

2. Microwave butter in a microwave safe mug until melted.

3. Add water and pancake mix, lemon zest, and oats to the mug. Gently stir together with a fork until just blended. Do not over mix - batter will be lumpy.

4. Microwave on 50% power for 30 seconds. Gently stir and fold in blueberries. Scrap sides of mug and smooth top of batter. Return to microwave. Cook on 50% power for an additional 1-1½ minutes longer until the batter has just cooked through and is no longer wet. Sprinkle with extra blueberries or toasted oats and serve immediately with syrup if desired.

Banana Cinnamon Pancake Mug Ingredients (per mug)
1/3 cup Krusteaz Buttermilk Pancake Mix
1 tbsp butter
3 tbsp water
1/8 tsp cinnamon
1/2 small banana (thinly sliced)

Directions
1. Gently spoon pancake mix into measuring cup and level it off with the back of a knife.

2. Microwave butter in a microwave safe mug until melted.

3. Add water, pancake mix, and cinnamon.

4. Microwave on 50% power for 30 seconds. Gently stir in thinly sliced banana after first 30 seconds of cooking. Return to microwave. Cook on 50% power for an additional 1-1½ minutes longer until the batter has just cooked through and is no longer wet.

5. Top with additional sliced banana and a dash more of cinnamon prior to serving. Serve with syrup.

Chocolate Chip Pancake Mug Ingredients (per mug)
1/3 cup Krusteaz Buttermilk Pancake Mix
1 tbsp butter
3 tbsp water
1 1/2 tbs chocolate chips

Directions
1. Gently spoon pancake mix into measuring cup and level it off with the back of a knife.

2. Microwave butter in a microwave safe mug until melted.

3. Add water and pancake mix and microwave on 50% power for 30 seconds. Gently fold in 1-2 tbsp chocolate chips after first 30 seconds of cooking. Return to microwave. Cook on 50% power for an additional 1-1½ minutes longer until the batter has just cooked through and is no longer wet.

4. Sprinkle with additional chocolate chips prior to serving.

TIP: Please note that cooking time may vary depending on the wattage of your microwave.
