Cookies and Creme Cookie Butter Rainbow Popcorn

It's been raining here in LA for the past two days so I thought it was the perfect week to experiment with my new cookies and creme butter. I know, it sounds overly-sweet and absolutely obnoxious and it is. Add rainbow m&m's and salted popcorn and you have yourself a fabulously sweet and happy treat. This is like popcorn crack. Mmmmmmmm.

Cookies and Creme Cookie Butter Rainbow Popcorn

Ingredients
10 cups slightly salted popcorn (already popped)
(1) 12 oz bag vanilla candy coating (or Candiquik)
2 Tb cookies and creme butter (Found at Trader Joes)
1 package plain m&m's

Directions
1. Pop your popcorn (2 bags) and place in a large bowl.

2. Melt your vanilla candy coating in the microwave at 30 second intervals, stirring in between, until everything is completely melted.

3. Once the candy coating is melted, add the cookies and creme butter to the melted chocolate. Stir until combined.

4. Line two baking sheets with wax paper and drizzle the coating over the popcorn and toss until everything is evenly coated or just on enough of the popcorn, leaving some white popcorn still visible (like pictured). Mix in m&m's and let cool or refrigerate for 10 minutes until everything is firm. Serve immediately or store in air-tight container for up to three days.
