Quick Berry Crumble
Ingredients
2 cups strawberries
2 cups blackberries
2 cups raspberries
1/4 cup granulated sugar
1/4 cup all-purpose flour
Crumble Topping
1 cup rolled oats
Pinch of salt
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 cup sugar
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Vanilla bean ice cream
Directions
1. Preheat oven to 350°F and butter a 9-inch pie dish.
2. In a large bowl gently combine berries with sugar and flour. Pour coated berries in prepared pie dish.
3. Prepare the topping by combining oats, flour, both sugars, and salt in a bowl. Use a pastry blender or hands to crumble the cold butter until topping resembles coarse meal. Sprinkle evenly over the berries.
4. Place the pie dish on a baking sheet and bake on the center rack until the the center is bubbling and the topping is golden brown, about 1 hour to 1 hour and 10 minutes. Remove the berry crisp and let cool on a rack. Sprinkle with finishing sugar if desired and serve with vanilla ice cream.
