Pancake Muffins

Pancakes on Pancakes.

Because.

It’s Sunday.

These are a fun take on pancakes. I used our favorite Krusteez pancake mix to make the pancake muffins as well as the mini pancakes. We buy the giant bag at Costco. We made plain pancakes, but you can easily add blueberries or chocolate chips if you wish. Scroll down for the recipe and see the IG video for the full tutorial.

Ingredients

3 cups Krusteaz pancake mix

2 1/4 water

Blueberries, chocolate chips optional

Butter

Syrup

Directions

  1. Whisk 3 cups of Krusteaz Professional Protein Buttermilk Pancake Mix and 2 1/4 cups water together until well-blended.

  2. Fold in blueberries or chocolate chips if desired.

  3. Scoop batter into 10 lightly greased or paper lined muffin tins.

  4. Bake at 350°F for 10 minutes.

  5. While pancake muffins are baking, make mini 1” pancakes (using a teaspoon to scoop the batter). Cook on a griddle or non-stick frying pan.

    TIP ** Use a non-stick pan or griddle (no butter) for perfectly browned pancakes. Flip each pancake when the air bubbles start popping.

  6. Remove pancake muffins from oven and place on serving platter. Top with mini pancakes and butter. Serve with syrup.
