3 INGREDIENT Crumpets
** You can substitute chocolate chips for the blueberries and you may use Greek yogurt instead of bananas if you have allergies **
Servings: 6 (3” crumpets)
INGREDIENTS
2 cups Self-Rising Flour
4 very ripe bananas (1 1/4 cups)
3/4 cup blueberries (fresh or frozen)
** To make your own self rising flour just use this basic formula: For every 1 cup of all-purpose flour (or gluten free flour), add 1 1/2 teaspoons of baking powder and 1/4 teaspoon fine salt. Whisk the ingredients thoroughly in a large bowl and store your self-rising flour in an airtight container in the pantry.

DIRECTIONS
In a large mixing bowl, combine self-rising flour and mashed bananas. Mix very well with a spatula then fold in your blueberries. You don’t want to smash your berries. The dough will be very sticky. If you have large bananas you can add another 1/4 cup of flour.
Line your air fryer tray or baking sheet with parchment paper AND grease generously with nonstick spray. Preheat to 350 degrees F.
Divide the dough into 6 balls using an ice cream scooper.
Air fry at 350°F (180°C) for 12-15 minutes (on the middle rack if using an oven shaped air fryer) or bake in oven for 20-24 minutes or until golden brown on the tops.
Remove from the air fryer and let cool. Slice and enjoy!
