The best quick 90 minute dinner rolls
Quick 90 minute Dinner Rolls
Makes 12 large bunny Easter rolls or 24 small regular dinner rolls.
Ingredients
4 cups All purpose flour
2 tablespoons rapid rise instant yeast
1/2 cup granulated sugar
1 tsp kosher salt
1½ cups warm milk, 110 degrees F
5 tablespoons butter, softened
1 egg, room temperature
2 tablespoons melted butter for brushing
Directions
1. Proof your yeast for five minutes in the warm milk (110 F).
2. Combine 3 cups of flour, yeast milk mixture, sugar, salt, butter, and egg in the bowl of a stand mixer.
3. Using the dough hook turn the mixer to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as needed.
3. Increase speed to medium and beat for 2 more minutes then add remaining 1 cup flour and kneed with the dough hook for another 2 minutes until you have a ball of slightly sticky dough.
5. Add 1/2 cup of additional flour if necessary (depending on where you live etc. you may need more flour). The dough should be slightly sticky and soft and should pull away from the edge of the bowl.
6. Transfer the dough to a lightly greased bowl and cover with a towel for 30 minutes at room temperature.
7. Once the dough has risen punch it down and Pinch off pieces of the dough and form 12 round bunny rolls and 24 small “bunny ears”.
8. Place two bunny ears next to each other on a lightly greased baking sheet and gently press the round dough ball on top of them, pinching the ears into the back of the dough ball. Cover with a towel and let rise for an additional 30 minutes at room temperature. Brush with an egg wash (optional) if you want them to be shiny.
9. Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through.
10. Remove bunny rolls and brush with the melted butter. Serve immediately!
