Halloween Cheesecake

Crust Ingredients

1 ½ cups graham cracker crumbs

2 tablespoons sugar

1 tablespoon brown sugar

7 tablespoons butter melted

Cheesecake Ingredients

32 oz cream cheese, room temp.

1 cup sugar

⅔ cups sour cream

1 ½ teaspoons vanilla extract

⅛ teaspoon salt

4 large eggs, room temp.

5 drops yellow food coloring

1-2 drops orange food coloring

Directions

  1. Preheat oven to 325F (160C).

  2. Prepare crust by combining graham cracker crumbs, sugar, and brown sugar. Add melted butter and mix well.

  3. Pour crumbs into a 9” Springform pan and press down firmly. Set aside.

  4. In the bowl of a stand mixer or in a large bowl (using a hand mixer) add cream cheese, salt, vanilla, sugar, food coloring, and mix until smooth.

  5. Mix on low speed, while gradually adding lightly beaten eggs, one at a time.

  6. Once mixed, stir in food coloring and pour cheesecake batter into prepared springform pan.

  7. Bake in the center rack of your oven at 325F (160C) for 60 minutes or until center is firm.

  8. Remove from oven and allow to cool for 15 minutes. Remove from the springform pan and use a piping tip to make the “cheese holes”. Clean the piping tip with a paper towel before making each hole.

  9. Allow cheesecake to cool for 1-2 hours before transferring to refrigerator. Refrigerate overnight or 4-6 hours. Add gummy rats and enjoy!
