Spider Web Pumpkin Pancakes
Ingredients
1 ½ cups whole milk
1 cup pumpkin puree
1 large egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground allspice
1 teaspoon ground cinnamon
½ teaspoon salt
Blackberries, optional
** Piping bag or Squeeze bottle
Directions
Stir milk, pumpkin, egg, oil, and vinegar together in a large bowl until well combined.
Whisk flour, brown sugar, baking powder, baking soda, spices, and salt together in a separate bowl. Add to wet pumpkin mixture and whisk just until combined.
Heat a nonstick pan over medium-high heat or spray a griddle with cooking spray.
For the spider webs, fill a piping bag fitted with a round tip with the pumpkin batter. Pipe an 8 point asterisk on the griddle. Connect the ends of the asterisk by gently piping batter between each one with a loose curved line. ** Pour 3 to 4 tablespoons batter for each pancake onto the hot griddle and flatten batter slightly with a spoon if making regular pancakes.
Cook until small bubbles appear and start to pop (about 2 minutes). Flip and cook for another minute on the other side. Stack and serve with butter, blackberries, and syrup.
