Easy Sunflower Easter Peep Cake
*My Cake is 10” and I used 16 Peeps
Ingredients
10-12” round chocolate cake
1 cup Extra Chocolate frosting
16-22 Yellow Peeps
6oz Green candy melts or white chocolate
(6) 8” squares of parchment paper
Offset spatula
Directions
Melt 6oz (about half a bag of green candy melts) at 30 second intervals (stirring in between), in a small glass bowl, until completely melted.
Pour a small amount of melted green candy melts on parchment paper and spread out with an offset spatula. It’s ok if it isn’t perfect. You can use a warm knife to cut your shape once it has hardened. Place another piece of parchment paper on top and smooth out with your hand. If you want a curved leaf you can place the parchment into a glass while it hardens.
** If your candy melts harden too quickly, simply place the piece of parchment with the melted leaf in the microwave for thirty seconds then immediately place back into the glass. (White chocolate and oil based food coloring is easier to work with because it doesn’t harden as quickly.) Set aside.
Add 1/2 cup of your favorite chocolate frosting to a piping bag. Pipe a small amount of chocolate along the edge of the top of the cake. Place all your peeps along the edge of the cake so they are slightly hanging over.
Pipe small bulbs of chocolate in the center of the cake until it resembles a sunflower. Place chocolate leaves at the base and serve.
