Strawberry Cream Cheese Stuffed French Toast Bites
Ingredients
8 ounces whipped cream cheese
2 tablespoons honey
1/2 cup strawberries diced, plus more for serving
1/4 cup granulated sugar (optional)
12 slices brioche bread (one loaf) or 12 mini brioche slider buns
1 cup milk
4 large eggs
1 teaspoon vanilla bean paste (or extract)
1 teaspoon cinnamon, plus more for dusting
¼ teaspoon salt
3 tablespoons butter

In a medium bowl, combine the whipped cream cheese, honey, granulated sugar, vanilla paste, and strawberries, set aside. **If omitting the granulated sugar taste your mixture and add more honey if desired at this time.
In a large shallow bowl, add milk, eggs, vanilla extract, cinnamon, and salt and whisk to combine.
Spread the cream cheese mixture on 6 slices of brioche bread, then seal with the other 6 slices (or 12 mini brioche slider buns).
Heat a medium non-stick skillet over medium heat. Add 1 tablespoon of butter to the skillet.
Dip the stuffed brioche in the egg and milk mixture, dredging the bread well on both sides so each side is coated in the batter. Immediately transfer from the bowl to the skillet. I like to sprinkle with a little more cinnamon at this time. Cook for 3-4 minutes until edges become golden brown, then flip and cook on the other side for an additional 3-4 minutes. If using the brioche slider buns make sure you brown all sides. Repeat for the remaining pieces.
Serve with powdered sugar, extra strawberries, and syrup.
