Spinach and Strawberry Spring Salad
Make sure to use an unglazed lead-free clay pot. I made the salad sign with a wood dowel, black construction paper, and a chalk marker.
Spinach and Strawberry Spring Salad
Ingredients for dressing
½ cup quality olive oil
¼ cup distilled white vinegar
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1 tablespoon dried minced onion
1/4 to 1/2 cup granulated white sugar *taste before you add more.
1/4 teaspoon Worcestershire sauce
Other ingredients
1 lb spinach leaves
1 -2 cups sliced strawberries
1/4 cup sliced almonds
1/2 cup crumbled goat cheese
Directions
To make the dressing whisk together olive oil, vinegar, sesame seeds, poppy seeds, dried onion, sugar, and Worcestershire in a medium bowl. Cover and refrigerate for about 1 hour or until ready to serve. *You can also blend everything together for a thicker dressing.
Toss the dressing with the spinach, then add sliced strawberries and almonds. Toss again and add salad to your flower pot. Top with more sliced almonds and goat cheese crumbles. Serve immediately.
Tips: Only use a lead-free clay pot to hold the salad. If you are unsure if your pot has lead, you can buy inexpensive lead test strips on Amazon. Make sure to wash the pot throughly before using.
